FOULING DYNAMIC MODEL OF PLATE HEAT EXCHANGERS DURING MILK TREATMENT

Abstract: A mathematical modelling and simulation of complex plate heat exchanger (PHE) under milk fouling are proposed. The model used particular flow and energy dynamic equations in x-y directions to predict the milk temperature. A 12-channel PHE with counter-current flows is used for the quantification of the thermal fouling resistance developed inside the channels. Exponential increasing of PHE area temperature result aggregation rate of unfolded protein and accompanied by a substantial increasing of thermal fouling resistance. The deposits due to the heat denatured betalactoglobulin also generate an increase of drop pressure due to the decrease in hydraulic diameter during fouling process. |
